Ingredients
1 cup long-grain white rice
1 cup tomato sauce or diced tomatoes
1 small onion, finely chopped
2 cloves garlic, minced
2 cups chicken broth or vegetable broth
2 tablespoons vegetable oil
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons cilantro or parsley, optional, chopped
Instructions
1. Heat vegetable oil in a skillet over medium heat. Add rice and stir until golden and fragrant.
2. Add onion and garlic, cook until onion is soft.
3. Stir in tomato sauce or diced tomatoes. Add broth, salt, and pepper.
4. Reduce heat to low, cover, and simmer 15–20 minutes.
5. Fluff with a fork, garnish with cilantro or parsley, and serve warm.
Notes
Toasting the rice helps it stay fluffy and separate.
For a vegetarian version, use vegetable broth.
For extra spice, add chopped jalapeños or red pepper flakes.
