Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup buttermilk
1 large egg
1/4 cup grated onion
Vegetable or peanut oil, for frying
Instructions
1. In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar until well combined.
2. Add the buttermilk and egg, stirring gently until just mixed. Fold in the grated onion.
3. Heat 2 inches of oil in a deep skillet or Dutch oven to 350°F (175°C).
4. Using a small scoop or spoon, drop tablespoon-sized portions of batter into the hot oil.
5. Fry in batches for 2–3 minutes per side until golden brown and crispy.
6. Remove with a slotted spoon and drain on paper towels.
7. Serve warm and enjoy!
Notes
Do not overcrowd the pan—this drops the oil temperature and results in greasy hush puppies.
Use a thermometer to keep oil steady at 350°F for best frying results.
For extra flavor, add a pinch of cayenne or chopped jalapeños to the batter.
