Ingredients
1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon pumpkin pie spice
1 cup pumpkin puree
½ cup granulated sugar
½ cup brown sugar
2 large eggs
½ cup vegetable oil
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
3. In a separate bowl, sift together flour, baking soda, salt, and pumpkin pie spice.
4. Gradually stir dry ingredients into wet mixture. Mix until just combined—do not overmix.
5. Pour batter into prepared pan and smooth the top.
6. Bake for 55–65 minutes, or until a toothpick comes out clean or with moist crumbs.
7. Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Notes
Make sure not to overmix the batter—this helps keep the bread soft and fluffy.
You can swap half the oil with applesauce for a lighter texture.
