1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
2 carrots, diced
1 bell pepper (any color), chopped
1 can (15 oz) crushed tomatoes or tomato sauce
4 cups beef broth
1 tsp Italian seasoning
Salt and pepper to taste
2 cups mafalda or rotini pasta (uncooked)
Fresh parsley, chopped (optional)
Instructions
- In a large pot over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess fat if necessary.
- Add diced onion and cook until soft, about 3-4 minutes. Stir in minced garlic and cook another minute.
- Mix in carrots and bell peppers. Cook for 5 minutes to soften slightly.
- Add crushed tomatoes and beef broth. Stir in Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer uncovered for 15-20 minutes.
- Add pasta and cook according to package instructions, about 8-10 minutes, until tender.
