Ingredients
2 large chicken breasts, sliced thin
8 oz penne pasta
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
Salt, to taste
Black pepper, to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Slice the chicken breasts into strips and season with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken strips until golden brown and fully cooked. Remove and set aside.
3. Bring a pot of salted water to boil and cook penne pasta according to package instructions. Drain and reserve 1 cup of pasta water.
4. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
5. Stir in heavy cream and let simmer for 2–3 minutes.
6. Add Parmesan cheese and stir until melted and smooth. If sauce is too thick, use a splash of reserved pasta water.
7. Add the cooked pasta into the sauce and toss to coat. Return chicken to skillet and stir to combine.
8. Garnish with chopped parsley and serve hot with extra Parmesan if desired.
Notes
Use freshly grated Parmesan for the best melt and flavor.
Don’t overcook the garlic—it should be fragrant but not browned.
Add a splash of pasta water if the sauce becomes too thick when reheating.
