Ingredients
2 pounds beef stew meat or sirloin tips
1 packet onion soup mix
1 can (10.5 ounces) cream of mushroom soup
2 cups beef broth
1 teaspoon garlic powder
0.5 teaspoon black pepper
1.5 cups sliced mushrooms (optional)
12 ounces egg noodles
1.5 tablespoons cornstarch
2 tablespoons water
Instructions
1. Trim any excess fat from the beef and cut into cubes if using a whole roast. Slice mushrooms if fresh.
2. Add the beef to the crockpot. Pour in the beef broth, then add the onion soup mix, cream of mushroom soup, garlic powder, black pepper, and mushrooms. Stir to combine.
3. Cover and cook on low for 7–8 hours or high for 4–5 hours until the beef is fork-tender.
4. About 30 minutes before serving, make a slurry by whisking the cornstarch and cold water together. Stir it into the crockpot. Cover and cook for another 20–30 minutes to thicken the sauce.
5. Meanwhile, cook egg noodles according to package directions. Drain and set aside.
6. Serve the beef tips and gravy over the noodles. Garnish with fresh parsley if desired.
Notes
For richer flavor, sear the beef in a hot skillet before adding it to the crockpot.
Add extra veggies like carrots or pearl onions for a more hearty meal.
