Ingredients
2 boneless skinless chicken breasts
2 cups cubed Velveeta cheese
1 cup shredded mozzarella cheese
10 ounces cheese tortellini (refrigerated or frozen)
1 cup heavy cream
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon unsalted butter
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Season chicken breasts with salt, pepper, Italian seasoning, and paprika.
2. In a large skillet or pot, heat olive oil and butter over medium-high heat. Sear chicken 6–7 minutes per side until golden and cooked through. Remove and rest.
3. In the same pot, reduce heat to medium and sauté minced garlic for 30 seconds.
4. Pour in heavy cream and add Velveeta cubes. Stir until melted, then add mozzarella and stir until smooth.
5. Add tortellini directly into the sauce. Cover and simmer 4–6 minutes until pasta is tender.
6. Slice rested chicken and serve over creamy tortellini. Garnish with red pepper flakes and parsley if desired.
Notes
Use refrigerated tortellini for quickest results and best texture.
Add a splash of milk or cream when reheating leftovers to restore creaminess.
