Ingredients
1 wheel (8 oz) brie cheese
1 cup fresh or frozen cranberries
1⁄3 cup chopped pecans
2 tablespoons maple syrup or honey
1 tablespoon butter
1 pinch salt
1 teaspoon fresh thyme (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. Place brie on a parchment-lined baking sheet or oven-safe dish. Optionally trim top rind.
3. In a small saucepan, melt butter over medium heat.
4. Add cranberries and salt, cook for 5 minutes until cranberries soften and begin to burst.
5. Stir in chopped pecans and maple syrup or honey. Simmer 2–3 minutes until glossy.
6. Spoon the cranberry-pecan topping over the brie.
7. Bake for 10–12 minutes, until the brie feels soft but retains shape.
8. Transfer to a serving platter, sprinkle with fresh thyme.
9. Serve warm with crackers, crostini, or apple slices.
Notes
Let the brie sit at room temperature for 15–20 minutes before baking for an even melt.
Use fresh thyme or rosemary for an extra burst of flavor.
Don’t overbake—the brie should be gooey, not completely collapsed.
