Ingredients
1 pound boneless skinless chicken breast or thighs
12 ounces penne pasta (uncooked)
4 ounces cream cheese
1 cup shredded cheddar cheese
1 packet ranch seasoning
6 slices cooked bacon, crumbled
2 cups chicken broth
1 cup milk or heavy cream
1 tablespoon butter or olive oil
1 tablespoon chopped parsley (optional, for garnish)
Instructions
1. Season chicken with salt, pepper, and garlic powder. Heat butter or oil in a large skillet over medium heat. Sear chicken for 6–8 minutes until fully cooked. Remove and set aside.
2. In the same skillet, add chicken broth and milk or cream. Bring to a simmer. Add uncooked pasta and cook uncovered, stirring occasionally, for 12–14 minutes until pasta is tender.
3. Reduce heat to low. Stir in cream cheese, ranch seasoning, and cheddar cheese until melted into a creamy sauce.
4. Return chicken and add bacon. Stir to combine and heat through for 2–3 minutes.
5. Garnish with parsley if desired. Serve warm and enjoy!
Notes
Use freshly shredded cheddar for smoother melting and better flavor.
Don’t overcook the pasta—keep it al dente to prevent sogginess.
Add a splash of milk or broth when reheating to bring back the creamy texture.
