Ingredients
2 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 cup all-purpose flour
2 large eggs
1 cup Italian-style breadcrumbs or Panko
½ cup grated Parmesan cheese
½ cup olive oil or avocado oil (for frying)
1 ½ cups marinara sauce
1 ½ cups shredded mozzarella cheese
2 tablespoons chopped fresh basil or parsley (optional)
Instructions
1. Slice the chicken breasts in half lengthwise to make 4 thin cutlets. Pound lightly for even thickness. Season both sides with salt and pepper.
2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
3. Dredge each chicken piece in flour, dip in egg, then coat in the breadcrumb-Parmesan mix. Press gently to adhere.
4. In a skillet over medium-high heat, heat oil. Fry chicken cutlets for 3–4 minutes per side until golden and crispy. Drain on paper towels.
5. Preheat oven to 425°F. Spread a little marinara in a baking dish. Place fried chicken on top. Spoon more marinara over each cutlet and top with mozzarella.
6. Bake for 10–12 minutes until cheese is melted and bubbling.
7. Garnish with chopped basil or parsley and serve hot over pasta or in a sandwich.
Notes
Let breaded chicken rest 5 minutes before frying to prevent coating from falling off.
For extra crispy texture, use Panko breadcrumbs.
Use fresh mozzarella for richer melt and flavor.
