Ingredients

Chicken breasts

Zucchini

Corn kernels (canned, fresh, or thawed frozen)

Garlic

Olive oil

Chicken broth

Cornstarch

Fresh parsley

Salt & pepper


Instructions

  1. Slice zucchini, chop parsley, and drain corn. Cut chicken into strips or chunks.
  2. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, sear until golden and cooked through (about 4-5 minutes per side). Remove and set aside.
  3. In the same skillet, sauté zucchini until lightly browned, about 4 minutes. Add corn and cook 2 more minutes.
  4. Lower heat. Add minced garlic and cook until fragrant. Stir in chicken broth and bring to a simmer.
  5. Mix cornstarch with water to form a slurry. Stir into skillet until sauce thickens.
  6. Return chicken to pan, coat with sauce, and simmer 2 minutes. Garnish with parsley.
