Description

This Easy Chicken Cobbler is a comforting, one-dish meal loaded with tender rotisserie chicken, colorful vegetables, and a creamy savory filling—all baked under a golden cheddar biscuit topping. It’s simple to prepare, makes excellent leftovers, and is perfect for cozy weeknights or hearty family dinners.


Ingredients

1 ½ cups shredded rotisserie chicken

1 ½ cups frozen mixed vegetables

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 ½ cups cheddar biscuit mix

½ cup milk

4 tablespoons melted butter

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Spread the shredded rotisserie chicken evenly across the bottom of the dish.

3. Add frozen mixed vegetables over the chicken in an even layer.

4. In a bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour it evenly over the chicken and vegetables. Do not stir.

5. In another bowl, mix cheddar biscuit mix with milk until it forms a thick batter. Spoon the biscuit dough gently over the top.

6. Drizzle melted butter over the biscuit topping. Sprinkle garlic powder, salt, and pepper on top.

7. Bake uncovered for 40–45 minutes, until the biscuit topping is golden and the filling is bubbling.

8. Let the cobbler rest for 5–10 minutes before serving.


Notes

Don’t stir the layers—letting them stay stacked creates the perfect cobbler effect.

You can substitute homemade biscuit dough if you prefer, just ensure it’s not overly dense.

To add extra richness, use cream instead of milk in the biscuit mix.
