Description

These Easy Baked Sweet Potatoes come out perfectly tender with crisp, flavorful skins and naturally sweet, creamy centers. A versatile side dish or light main, they’re simple to make and easy to customize with your favorite toppings.


Ingredients

Scale

2 to 4 medium sweet potatoes

1 tablespoon olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

Toppings of choice (butter, sour cream, maple syrup, chives, Parmesan, cinnamon)


Instructions

1. Preheat oven to 400°F (200°C).

2. Wash and scrub sweet potatoes thoroughly. Pat them dry.

3. Use a fork to poke holes all over each sweet potato.

4. Rub with olive oil, and sprinkle with salt and pepper.

5. Place directly on the oven rack or a parchment-lined baking sheet.

6. Bake for 45 to 60 minutes, until tender and easily pierced with a knife.

7. Let cool for 5 minutes. Slice open and fluff the inside with a fork.

8. Add toppings of your choice and serve warm.


Notes

For crispier skins, place the sweet potatoes directly on the oven rack.

You can bake these ahead of time and reheat for quick weeknight meals.

For a sweet twist, top with maple syrup and cinnamon.
