Ingredients
2 pounds chicken wings (split into flats and drumettes, skin-on)
1 tablespoon baking powder (aluminum-free)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon cayenne pepper (optional)
1 teaspoon brown sugar
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
2. Pat the chicken wings very dry using paper towels. This helps them crisp up in the oven.
3. In a large bowl, mix baking powder, smoked paprika, garlic powder, onion powder, salt, pepper, cayenne (optional), and brown sugar.
4. Add wings to the bowl and toss until they’re well coated in the seasoning mix.
5. Arrange the wings in a single layer on the wire rack.
6. Bake for 20 minutes, then flip each wing.
7. Continue baking for another 20–25 minutes or until golden, crispy, and cooked through.
8. Let wings rest for 5 minutes before serving hot.

Make sure your wings are completely dry before seasoning—this is crucial for crispiness.
Use aluminum-free baking powder to avoid any metallic taste.
