Description

A bold and creamy Tuscan-style pasta dish with seared garlic chicken bites and a smoky sun-dried tomato Cajun Alfredo sauce. It’s perfect for weeknight comfort or impressing dinner guests with little effort.


Ingredients

2 large chicken breasts, boneless and skinless

2 tablespoons olive oil

1 tablespoon Tuscan seasoning

2 cloves fresh garlic, minced

12 ounces rotini pasta

2 tablespoons butter

1 ½ cups heavy cream

1 cup Parmesan cheese, freshly grated

½ cup sun-dried tomatoes, chopped

1 tablespoon Cajun seasoning

1 tablespoon fresh parsley, chopped

Salt and black pepper to taste


Instructions

1. Cut chicken breasts into bite-sized pieces. Toss with olive oil, Tuscan seasoning, salt, and pepper. Let marinate for 10 minutes.

2. In a hot skillet over medium-high heat, add a splash of olive oil and sear the chicken bites in batches. Cook 3–4 minutes per side until golden and fully cooked. Set aside.

3. In a separate pot, cook rotini pasta in salted water until al dente. Drain and set aside.

4. In the same skillet used for the chicken, reduce heat to medium and melt butter. Add minced garlic and sauté until fragrant.

5. Stir in heavy cream, Cajun seasoning, and sun-dried tomatoes. Simmer for 3–5 minutes.

6. Add Parmesan cheese and stir until sauce is creamy and smooth.

7. Toss in the cooked rotini pasta, making sure every piece is coated. Adjust salt and pepper to taste.

8. Return the chicken bites to the skillet or serve them on the side.

9. Garnish with fresh parsley and extra Parmesan before serving.


Notes

Let the chicken sit for a few minutes after cooking to retain juices before adding it back to the dish.

For extra heat, sprinkle in more Cajun seasoning or red pepper flakes.

Use freshly grated Parmesan—not the shelf-stable kind—for the best creamy texture.
