Description
This Teriyaki Chicken Stir-Fry is a fast, flavorful, and colorful one-pan meal. Juicy chicken breast, crisp veggies, and wild rice are tossed in a sweet and savory homemade teriyaki sauce. Perfect for weeknight dinners or meal prep!
Ingredients
1 lb chicken breast, diced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 cup broccoli florets
1 cup snow peas
1 carrot, thinly sliced
2 green onions, chopped
1/2 cup green peas
2 cups cooked wild rice
1 tablespoon vegetable oil
For the Teriyaki Sauce:
1/2 cup soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon rice vinegar or mirin
1 tablespoon cornstarch
2 tablespoons water
Instructions
1. In a small saucepan, combine soy sauce, brown sugar, garlic, ginger, and vinegar. Simmer over medium heat.
2. In a bowl, mix cornstarch with water and whisk into the sauce. Stir until thick and glossy, then remove from heat.
3. Cook wild rice according to package directions, preferably using chicken broth for added flavor. Set aside.
4. Heat oil in a large skillet or wok over medium-high heat. Add diced chicken and cook for 6–8 minutes until golden and fully cooked. Remove and set aside.
5. In the same pan, stir-fry bell peppers, broccoli, carrots, and snow peas for 4–5 minutes until crisp-tender.
6. Return chicken to the pan. Pour in the teriyaki sauce and toss everything until coated and heated through. Add green onions and peas just before serving.
7. Serve over wild rice. Garnish with sesame seeds or fresh herbs if desired.
Notes
Stir-fry the vegetables on high heat for a few minutes to keep them crisp and vibrant.
For a vegetarian version, swap chicken with tofu and use vegetable broth.
Double the teriyaki sauce for extra drizzles over your rice or noodles.
