Ingredients
1 ½ pounds boneless, skinless chicken thighs or breasts
¼ cup soy sauce
3 tablespoons brown sugar
3 cloves garlic, minced

1 tablespoon rice vinegar
1 tablespoon cornstarch
2 tablespoons water (for slurry)
2 cups cooked jasmine or basmati rice
2 cups broccoli florets, steamed

Instructions
1. Trim and cut the chicken into bite-sized pieces. Mince garlic and grate ginger. In a bowl, mix soy sauce, brown sugar, garlic, ginger, and rice vinegar to create the sauce. In another bowl, mix cornstarch with water to make a slurry.
2. Heat a skillet over medium-high heat with oil. Sear chicken pieces in a single layer for 6–8 minutes or until cooked through. Work in batches to avoid overcrowding.
3. Reduce heat to medium. Pour sauce over the chicken and simmer for 2–3 minutes. Add the cornstarch slurry and stir until the sauce becomes thick and sticky.
4. While chicken simmers, steam broccoli until tender using a steamer or microwave with water.
5. Cook rice according to package instructions and fluff with a fork.
6. Assemble bowls: place rice, add sticky chicken, steamed broccoli, drizzle with peanut sauce or spicy mayo, and garnish with green onions and sesame seeds. Serve hot.

For extra crispy edges, avoid stirring the chicken too often while searing. Let it brown well before flipping.
