Ingredients
Chicken breast or thighs
Coconut milk (full-fat)
Chicken broth
Red bell pepper, sliced
Garlic, minced
Fresh ginger, grated
Lemongrass, bruised
Thai red curry paste
Fish sauce
Lime juice
Fresh cilantro or parsley for garnish
Instructions
- Mince garlic and grate ginger. Bruise lemongrass stalks.
- In a crockpot, combine chicken, coconut milk, chicken broth, red bell pepper, garlic, ginger, lemongrass, and curry paste.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Remove chicken, shred with forks, and return to pot.
- Stir in fish sauce and lime juice. Cook 10 more minutes.
- Garnish with chopped herbs and optional chili oil or sliced red chilies.
