1 lb (450g) sausages (pork, chicken, or smoked)
1.5 lbs (700g) potatoes, peeled and diced
3 carrots, chopped
1 large onion, chopped
3 cloves garlic, minced
1 can (14.5 oz) chopped tomatoes
2 tablespoons tomato paste
1 cup beef or vegetable broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet and brown the sausages on all sides.
- While sausages are browning, chop potatoes, carrots, onion, and garlic.
- Layer potatoes, carrots, onion, and garlic in the crockpot.
- Place browned sausages on top.
- In a bowl, combine chopped tomatoes, tomato paste, broth, herbs, salt, and pepper.
- Pour the tomato mixture over the contents of the crockpot.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- Stir gently before serving and garnish with fresh herbs if desired.
