A warm, hearty dinner made effortlessly in your crockpot, this sausage casserole is loaded with tender vegetables, savory sausage, and a herbed tomato sauce that simmers to perfection. It’s ideal for busy weeknights or cozy weekend meals.

1 lb (450g) sausages (pork, chicken, or smoked)

1.5 lbs (700g) potatoes, peeled and diced

3 carrots, chopped

1 large onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) chopped tomatoes

2 tablespoons tomato paste

1 cup beef or vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil


Instructions

  1. Heat olive oil in a skillet and brown the sausages on all sides.
  2. While sausages are browning, chop potatoes, carrots, onion, and garlic.
  3. Layer potatoes, carrots, onion, and garlic in the crockpot.
  4. Place browned sausages on top.
  5. In a bowl, combine chopped tomatoes, tomato paste, broth, herbs, salt, and pepper.
  6. Pour the tomato mixture over the contents of the crockpot.
  7. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  8. Stir gently before serving and garnish with fresh herbs if desired.
