Ingredients
6 large russet potatoes
1 medium yellow onion
3 cloves garlic
4 cups chicken broth
8 oz cream cheese
1 1/2 cups shredded cheddar cheese
1 cup heavy cream
6 slices bacon
2 tablespoons chopped green onions
2 tablespoons chopped parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
- 1. Peel and dice the potatoes into small cubes, then add them to the crock pot along with chopped onion and minced garlic.
- Pour in the chicken broth, ensuring the potatoes are mostly covered.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until tender.
- Use a potato masher or immersion blender to partially mash the potatoes, creating a thick and creamy texture.
- Add the cream cheese, heavy cream, and shredded cheddar cheese.
- Stir until fully melted and smooth.
- Cook for an additional 15–20 minutes on low until everything is well combined.
- Serve hot, topped with crispy bacon, green onions, parsley, and extra cheese if desired.
Notes
For extra thickness, mash more of the potatoes or let the soup sit for a few minutes before serving.
If the soup becomes too thick, add a splash of broth or milk to loosen it.
Cook bacon separately and add just before serving to keep it crispy.
