6 large russet potatoes

1 medium yellow onion

3 cloves garlic

4 cups chicken broth

8 oz cream cheese

1 1/2 cups shredded cheddar cheese

1 cup heavy cream

6 slices bacon

2 tablespoons chopped green onions

2 tablespoons chopped parsley

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

  1. 1. Peel and dice the potatoes into small cubes, then add them to the crock pot along with chopped onion and minced garlic.
  2. Pour in the chicken broth, ensuring the potatoes are mostly covered.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours until tender.
  4. Use a potato masher or immersion blender to partially mash the potatoes, creating a thick and creamy texture.
  5. Add the cream cheese, heavy cream, and shredded cheddar cheese.
  6. Stir until fully melted and smooth.
  7. Cook for an additional 15–20 minutes on low until everything is well combined.
  8. Serve hot, topped with crispy bacon, green onions, parsley, and extra cheese if desired.

Notes

For extra thickness, mash more of the potatoes or let the soup sit for a few minutes before serving.

If the soup becomes too thick, add a splash of broth or milk to loosen it.

Cook bacon separately and add just before serving to keep it crispy.
