This Crock Pot Cheesesteak Tortellini is an easy, slow-cooked dinner loaded with cheesy tortellini, seasoned ground beef, sautéed peppers and onions, and a creamy, savory sauce. It brings the cozy comfort of a Philly cheesesteak with a pasta twist that’s perfect for busy weeknights or meal prepping.
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 cup sliced green bell pepper
1 cup sliced red bell pepper
1 medium yellow onion, sliced
2 cups beef broth
8 ounces cream cheese, cubed
20 ounces refrigerated cheese tortellini
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded provolone or mozzarella cheese
Instructions
1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat.
2. In the same skillet, sauté onions and bell peppers until softened (about 4–5 minutes).
3. In the crock pot, combine browned beef, sautéed vegetables, garlic powder, onion powder, salt, pepper, and beef broth. Stir to combine.
4. Cover and cook on LOW for 3 to 4 hours.
5. About 30 minutes before serving, stir in the cream cheese until melted.
6. Add cheese tortellini and stir gently. Cover and cook for the remaining time.
7. Before serving, sprinkle provolone or mozzarella cheese on top. Cover again until melted, or serve immediately.
Notes
Let cream cheese come to room temperature before adding for easier melting.
Use fresh or refrigerated tortellini for best texture in the crock pot.
Add a splash of broth or milk when reheating to keep the pasta creamy.
