Ingredients
1.5 lbs baby potatoes, halved
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon kosher salt
½ teaspoon black pepper
1 tablespoon fresh parsley, chopped
½ teaspoon smoked paprika (optional)
2 tablespoons grated Parmesan cheese (optional)
Instructions
1. Preheat oven to 425°F (220°C). Wash and scrub baby potatoes, then cut them in half. Pat dry with a kitchen towel to remove excess moisture.
2. In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, smoked paprika, and Parmesan if using. Mix well to coat evenly.
