1 cup cottage cheese (full-fat, small curd)
1/3 cup all-purpose flour (plus extra if needed)
2 large eggs (divided)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
3/4 cup cornmeal
2 tablespoons chopped fresh herbs (like parsley or chives)
Oil for frying (vegetable or canola)
Instructions
- Make the Mixture: In a mixing bowl, combine the cottage cheese, flour, one beaten egg, salt, pepper, and optional garlic powder. Stir until it thickens.
- Shape the Bites: Form the mixture into small balls or nuggets. Chill in the fridge for 30 minutes to firm up.
- Prepare Coating: Beat the second egg. Dip each chilled bite into egg, then roll in cornmeal to coat.
- Fry: Heat oil in a skillet over medium. Fry each coated piece for 2–3 minutes per side until golden.
- Drain & Garnish: Place on paper towels to drain. Garnish with chopped herbs.
