Ingredients
1 pound penne pasta
1 pound ground beef
1 cup diced red bell peppers
8 ounces Velveeta cheese, cubed
1 cup heavy cream
2 teaspoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup shredded mozzarella cheese
1 tablespoon chopped parsley (optional)
Salt and black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente according to package directions. Drain and set aside.
2. In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat. Season with Cajun seasoning, garlic powder, and onion powder.
3. Add diced red bell peppers to the skillet and sauté for 3–4 minutes until slightly softened.
4. Lower heat to medium-low. Pour in heavy cream and stir to deglaze. Add Velveeta cubes and stir until melted into a smooth sauce.
5. Add the drained penne pasta to the skillet and toss to fully coat in the sauce. Taste and adjust seasoning.
6. Optional: Transfer mixture to a baking dish, sprinkle mozzarella on top, and broil for 2–3 minutes until golden and bubbly.
7. Garnish with parsley if desired and serve hot.
Notes
Use freshly shredded mozzarella for the best melt and golden top.
If reheating leftovers, add a splash of cream or milk to keep the sauce silky.
