Ingredients
1 lb chicken thighs, boneless and skinless
8 oz penne pasta
8 oz Velveeta cheese, cubed
1 cup heavy cream
3 garlic cloves, minced
3 tbsp salted butter
1/2 cup grated parmesan cheese
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Season chicken thighs with salt, pepper, and Italian seasoning.
2. Heat a skillet over medium-high heat and sear chicken until golden and fully cooked. Remove and set aside.
3. Cook penne pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
4. In a saucepan, combine Velveeta cheese and heavy cream over low heat, stirring until smooth. Thin with reserved pasta water if needed.
5. In the same skillet from the chicken, melt butter and sauté garlic until fragrant. Stir in parmesan and Italian seasoning. Simmer until thickened.
6. Toss pasta with the cheese sauce. Plate with sliced chicken and drizzle garlic butter parmesan sauce on top. Garnish with herbs if desired.
Notes
Let the chicken rest before slicing to retain juices.
Adjust the cheese sauce thickness using reserved pasta water or more cream.
