Description
Creamy Sun-Dried Tomato Chicken is a one-pan wonder with tender seared chicken, a garlic parmesan cream sauce, and tangy sun-dried tomatoes. Perfect over pasta, potatoes, or bread.
Ingredients
2 chicken breasts or thighs
0.5 cup sun-dried tomatoes, chopped
1 cup heavy cream
3 cloves garlic, minced
0.5 cup grated parmesan cheese
0.5 cup chicken broth
1 teaspoon Italian seasoning
2 tablespoons fresh parsley, chopped
1 sprig fresh rosemary (optional)
2 tablespoons olive oil
1 tablespoon butter
salt, to taste
pepper, to taste
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken 5–7 minutes per side. Remove.
3. In the same skillet, sauté garlic 30 seconds. Add sun-dried tomatoes, cook 1 minute.
4. Pour in chicken broth and cream. Stir, simmer, and scrape browned bits.
5. Add parmesan, stir until melted.
6. Return chicken, spoon sauce over, simmer 2–3 minutes.
7. Garnish with parsley and rosemary.
Notes
Serve over pasta, mashed potatoes, or with crusty bread.
Store in airtight container up to 3 days.
Reheat gently, adding broth or cream to loosen sauce if needed.
