Fresh or frozen cheese, spinach, or mushroom ravioli

2 cups sliced cremini or baby bella mushrooms

2 tablespoons butter

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook ravioli according to package instructions (4-5 minutes for fresh). Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, melt butter over medium heat. Add mushrooms and sauté for 6-8 minutes until golden. Season lightly.
  3. Lower heat, add garlic, and cook for 1 minute until fragrant.
  4. Stir in heavy cream and simmer for 3-4 minutes.
  5. Add Parmesan cheese and stir until melted and sauce thickens. Use pasta water to loosen if needed.
  6. Toss ravioli in the sauce. Simmer for 1-2 minutes to combine flavors.
  7. Serve garnished with fresh parsley and extra Parmesan.
