Description
Tender rotini spirals tossed in a rich Velveeta cheese sauce, topped with spicy Cajun-seasoned beef and melty mozzarella. A creamy, bold, and comforting pasta dish ready in under an hour.
Ingredients
16 oz rotini pasta
1 lb ground beef (80/20)
2 tbsp Cajun seasoning
12 oz Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
1 cup heavy cream
2 tbsp butter
2 tbsp fresh parsley, chopped
1 tsp red chili flakes (optional)
Instructions
1. Bring a large pot of salted water to a boil. Add the rotini and cook until al dente. Drain, toss with a bit of butter, and set aside.
2. In a skillet over medium-high heat, cook the ground beef until nearly done. Stir in Cajun seasoning and cook until browned and slightly crispy. Set aside.
3. In a saucepan, melt butter over medium heat. Add heavy cream and bring to a gentle simmer. Stir in Velveeta until smooth.
4. Add the cooked rotini to the sauce, stirring until coated.
5. Transfer pasta to a serving dish. Top with mozzarella, then the Cajun beef.
6. Garnish with parsley and chili flakes if desired. Serve hot.
Notes
Use freshly shredded mozzarella for the best melt.
Adjust Cajun seasoning to control the spice level.
Add a splash of milk when reheating to keep the sauce creamy.
