16 ounces potato gnocchi

2 tablespoons butter

3 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1 cup chicken broth

1 cup heavy cream

3/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

2 cups baby spinach

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh parsley


Instructions

1. Melt the butter in a large skillet over medium heat.

2. Add the minced garlic and chopped sun-dried tomatoes, then cook for 1 to 2 minutes until fragrant.

3. Pour in the chicken broth and heavy cream.

4. Stir in the Italian seasoning, red pepper flakes, salt, and black pepper.

5. Add the gnocchi and stir well to coat.

6. Simmer for 4 to 6 minutes, stirring occasionally, until the gnocchi is tender and the sauce starts to thicken.

7. Reduce the heat to low and stir in the Parmesan cheese until the sauce is smooth and creamy.

8. Add the baby spinach and cook for 1 to 2 minutes until wilted.

9. Stir in the chopped basil and parsley.

10. Serve warm with extra Parmesan if desired.


Notes

Use freshly grated Parmesan for the smoothest sauce and best flavor.

Stir the gnocchi gently so it stays tender and does not break apart.
