1 lb ground chicken

1/3 cup breadcrumbs

1/4 cup grated parmesan cheese

1 large egg

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 tablespoon butter

1/2 cup sun-dried tomatoes (chopped)

2 cloves garlic (minced)

3/4 cup chicken broth

3/4 cup heavy cream

1 cup fresh spinach

1/4 cup grated parmesan (for sauce finish)

1/4 cup fresh basil (chopped)

1/4 teaspoon crushed red pepper flakes (optional)


Instructions

1. In a bowl, mix ground chicken, breadcrumbs, parmesan, egg, garlic powder, onion powder, salt, and pepper until just combined.

2. Shape into 1 to 1.5 inch meatballs.

3. Heat olive oil and butter in a skillet over medium heat. Sear meatballs until golden on all sides. Remove and set aside.

4. In the same pan, sauté sun-dried tomatoes and garlic for 1–2 minutes.

5. Deglaze with chicken broth, then stir in heavy cream. Simmer for 2–3 minutes.

6. Add meatballs back into the skillet. Simmer for 8–10 minutes until cooked through and sauce is creamy.

7. Stir in spinach until wilted. Add parmesan and basil. Serve hot with pasta, rice, or bread.


Notes

Don’t overmix the meatball mixture — it keeps them tender.

If the sauce thickens too much, add a splash of broth to loosen it.

For extra flavor, use the oil from the sun-dried tomato jar for sautéing.
