2 large chicken breasts, cut into strips or chunks

1 tablespoon olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 cups heavy cream

1 cup freshly grated Parmesan cheese

8 oz rotini pasta

1/2 cup reserved pasta water (as needed for sauce consistency)

Fresh parsley, chopped (for garnish)

Optional: crushed red pepper flakes or extra Parmesan for topping


Instructions

  1. Bring a large pot of salted water to a boil and cook rotini according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. Season chicken pieces with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken and cook until golden brown and fully cooked. Remove and set aside.
  4. In the same skillet, reduce heat to medium and melt the butter. Sauté garlic for about 1 minute until fragrant.
  5. Pour in the heavy cream and stir. Bring to a gentle simmer.
  6. Add Parmesan cheese and stir until melted and smooth. Adjust consistency with reserved pasta water as needed.
