Ingredients
2 large chicken breasts
10 oz rotini pasta
2 tablespoons olive oil
3 tablespoons unsalted butter (divided)
4 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon paprika
½ teaspoon salt (adjust to taste)
½ teaspoon cracked black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Pat chicken breasts dry and season with salt, pepper, paprika, and Italian seasoning.
2. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium heat.
3. Add chicken breasts and sear for 6–7 minutes on each side until golden brown and cooked through. Remove and set aside.
4. In a large pot, boil salted water and cook rotini until al dente. Drain and set aside.
5. In the same skillet, add 2 tablespoons butter and sauté minced garlic for 1 minute.
6. Pour in heavy cream and bring to a simmer. Stir in grated parmesan until melted and sauce is thickened.
7. Taste and adjust salt and pepper as needed.
8. Slice the cooked chicken.
9. Add rotini to the sauce and toss to coat.
10. Top with sliced chicken and garnish with fresh parsley.
11. Serve warm and enjoy!
Notes
Use freshly grated parmesan cheese for the best melt and flavor.
Don’t overcook the garlic; it should be fragrant, not browned.
Add a splash of cream or pasta water when reheating to keep the sauce smooth.
