Description

Creamy French Onion Tortellini is a comforting and luxurious pasta dish that brings all the depth of French onion soup into a creamy, cheesy tortellini skillet. It features caramelized onions, fresh herbs, and melted Gruyère cheese in a luscious sauce that hugs every bite of pasta. Quick to make and wildly flavorful—perfect for weeknights or a cozy dinner with friends.


Ingredients

9 oz cheese tortellini

2 large yellow onions, thinly sliced

3 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 cup beef broth

3/4 cup heavy cream

1 cup shredded Gruyère or Swiss cheese

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)


Instructions

1. Melt butter in a large skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for 20–25 minutes until deeply caramelized.

2. Add garlic and thyme during the last 2–3 minutes of caramelizing. Sauté until fragrant.

3. Pour in the beef broth and scrape up browned bits. Simmer for a few minutes to reduce slightly.

4. Stir in heavy cream and let it heat through. Simmer gently until slightly thickened.

5. Add shredded Gruyère cheese and stir until melted and smooth.

6. Meanwhile, cook tortellini according to package directions. Drain and add to the sauce.

7. Toss to coat and season with salt and pepper to taste.

8. Serve hot, topped with Parmesan, extra thyme, and cracked pepper if desired.


Notes

Caramelize the onions low and slow for best flavor—don’t rush this step!

For a richer sauce, add an extra splash of cream when reheating.

Gruyère is ideal, but Swiss, fontina, or even provolone can work in a pinch.
