2 cups full-fat small curd cottage cheese
1 cup heavy whipping cream
1/2 cup sweetened condensed milk
1 tsp vanilla extract
1 tbsp powdered gelatin (or 1 tbsp agar agar)
1/4 cup powdered sugar
1 1/2 cups crushed vanilla cake or biscuits
Optional: 1/3 cup fruit jam or swirl of choice
Instructions
- In a small bowl, bloom gelatin or agar agar in warm water (about 3 tbsp) for 5–10 minutes.
- Blend cottage cheese in a food processor or blender until completely smooth.
- Whip heavy cream until soft peaks form.
- In a large bowl, fold the blended cottage cheese into the whipped cream.
- Add sweetened condensed milk, vanilla extract, and powdered sugar. Mix gently.
- Stir in the dissolved gelatin until fully incorporated.
- Press your crushed cake or biscuit base into the bottom of a springform pan.
- Pour the creamy mixture over the base. Add optional jam swirls.
- Smooth the top and refrigerate for 4+ hours or overnight.
- Slice, serve chilled, and garnish as desired.
