Ingredients
2 boneless skinless chicken breasts
9 oz cheese tortellini (refrigerated or fresh)
1 tablespoon olive oil
2 tablespoons unsalted butter (divided)
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
3 cloves garlic minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 cups baby spinach
1⁄4 cup chicken broth (optional, to thin sauce if needed)
Instructions
1. Pat chicken breasts dry. Season both sides with salt, pepper, and paprika.
2. In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove from pan and let rest.
3. In a large pot, cook tortellini according to package instructions. Drain and set aside.
4. In the same skillet used for chicken, melt the remaining tablespoon of butter. Add minced garlic and sauté until fragrant.
5. Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
6. Add spinach and let it wilt into the sauce. Use chicken broth if sauce is too thick.
7. Add tortellini and gently fold into the sauce.
8. Slice chicken and place on top of pasta. Spoon extra sauce over if desired.
9. Serve hot, garnished with additional Parmesan or parsley if preferred.
Notes
Don’t boil the cream sauce — simmer gently to prevent curdling.
For extra flavor, marinate chicken in olive oil and spices 30 minutes before cooking.
Fresh Parmesan melts best — avoid pre-shredded for a smoother sauce.
