A comforting pasta dinner featuring golden Cajun-crusted chicken served over creamy twisted rotini pasta with a mozzarella Alfredo sauce. Perfect for weeknights or special family meals.
Ingredients
2 chicken breasts
2 tablespoons Cajun seasoning
1 cup breadcrumbs
½ cup grated Parmesan cheese
12 ounces rotini pasta
3 tablespoons butter
3 cloves garlic, minced
1 ½ cups heavy cream
2 cups shredded mozzarella cheese
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts with Cajun seasoning and coat in a mixture of breadcrumbs and Parmesan.
2. In a skillet, heat oil and cook chicken until golden and fully cooked. Set aside.
3. Boil pasta until al dente; reserve ½ cup pasta water, then drain.
4. In the same skillet, melt butter and sauté garlic. Add cream, simmer 3–4 minutes. Stir in mozzarella until creamy. Use pasta water if sauce is too thick.
5. Toss pasta in sauce and garnish with parsley.
6. Slice chicken and serve over pasta with extra Parmesan.
Notes
For maximum crispiness, let the chicken rest before slicing to keep the crust intact.
Reserve pasta water—it’s the secret to adjusting Alfredo sauce consistency.
Add cayenne pepper to the Cajun mix if you love extra heat.
