Description

This Creamy Cajun Chicken Rotini with Mozzarella Alfredo Sauce is a spicy, cheesy, one-skillet comfort meal. Juicy Cajun-seasoned chicken is tossed with tender rotini pasta and coated in a rich mozzarella Alfredo sauce. Perfect for a hearty family dinner or meal prep favorite, it’s a flavorful twist on classic Alfredo.


Ingredients

12 oz rotini pasta

1 lb chicken breast, sliced into strips

2 tbsp Cajun seasoning

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

Salt, to taste

Black pepper, to taste

1/4 cup reserved pasta water (optional)


Instructions

1. Slice chicken into strips and season with Cajun seasoning, salt, and pepper.

2. In a large skillet over medium-high heat, heat olive oil and 1 tbsp butter. Cook chicken until browned and fully cooked. Set aside.

3. In the same skillet, add remaining butter and minced garlic. Sauté until fragrant, about 30 seconds to 1 minute.

4. Reduce heat and pour in heavy cream. Simmer for 3–4 minutes, then stir in mozzarella and Parmesan until melted and smooth.

5. While sauce simmers, cook rotini pasta in salted boiling water until al dente. Drain and reserve 1/4 cup pasta water.

6. Return cooked chicken and pasta to the skillet. Toss until coated. Add pasta water if sauce is too thick.

7. Simmer everything together for 2–3 more minutes. Adjust seasoning if needed.

8. Serve hot, garnished with extra Parmesan or chopped parsley if desired.


Notes

To tone down the heat, reduce Cajun seasoning or use a milder blend.

Add steamed broccoli or spinach for extra nutrition without changing the flavor.

For a smoother sauce when reheating, stir in a splash of cream or milk.
