This bold and creamy Cajun chicken pasta is a flavor-loaded meal featuring juicy spiced chicken, silky pasta, fluffy whipped roasted garlic feta, and crispy chickpeas. It’s satisfying, vibrant, and perfect for a cozy dinner or meal prep with flair.
Ingredients
2 chicken breasts, boneless and skinless
2 tablespoons Cajun seasoning
8 ounces spaghetti or linguine
1 cup feta cheese
1 bulb roasted garlic
2 tablespoons olive oil (for cooking)
1 can (15 oz) chickpeas, drained and rinsed
2 tablespoons olive oil (for roasting)
1 tablespoon chopped fresh parsley
Salt and pepper to taste
Instructions
1. Cut chicken into bite-sized pieces and coat with Cajun seasoning. In a skillet over medium-high heat, sear with olive oil until cooked and slightly charred. Set aside.
2. Preheat oven to 400°F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes. Let cool.
3. In a food processor, combine feta, roasted garlic cloves, a drizzle of olive oil, and a splash of water or cream. Blend until smooth and fluffy.
4. Boil pasta in salted water according to package directions. Drain and toss with a bit of olive oil.
5. Pat chickpeas dry and toss with olive oil, salt, and a bit of Cajun seasoning. Roast at 425°F for 20–25 minutes until crispy.
6. Assemble by plating pasta, topping with chicken, whipped feta, and chickpeas. Garnish with chopped parsley and an optional sprinkle of paprika.
Notes
Be sure to dry the chickpeas thoroughly for ultimate crispiness.
Add a splash of cream to the whipped feta for an extra silky texture.
Roast the garlic ahead of time and store it in olive oil to save prep time.
