Ingredients
1 lb chicken breast, cut into bite-sized pieces
2 tbsp Cajun seasoning
2 tbsp olive oil
2 tbsp butter, divided
4 cloves garlic, minced
1 red bell pepper, diced
2 cups heavy cream
1 cup cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
12 oz linguine pasta
1/4 cup fresh parsley, chopped
Instructions
1. Pat chicken pieces dry and coat with Cajun seasoning.
2. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear chicken until golden and cooked through; set aside.
3. In the same skillet, add remaining butter. Sauté garlic for 30 seconds, then add bell pepper and cook until softened.
4. Stir in heavy cream, scraping up browned bits. Reduce heat and whisk in cheddar and Parmesan until smooth.
5. Cook linguine in salted boiling water until al dente; drain, reserving 1/2 cup pasta water.
6. Toss pasta with sauce, adding reserved pasta water as needed. Top with chicken and garnish with parsley.
Notes
Use freshly grated cheese for the smoothest sauce.
Don’t overcook the pasta — the heat from the sauce will finish it perfectly.
For extra spice, add a pinch of cayenne or red pepper flakes to the sauce.
