Ingredients
4 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup ranch dressing
1/2 cup shredded provolone cheese
1/2 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
1/3 cup panko bread crumbs
1 tablespoon butter (softened)
1 tablespoon chopped fresh parsley (optional for garnish)
Instructions
1. Pound the chicken breasts to an even thickness using a meat mallet. Season both sides with salt, pepper, garlic powder, and onion powder.
2. Heat olive oil in a skillet over medium-high heat. Grill each chicken breast for 5-6 minutes per side or until internal temp reaches 165°F. Transfer to a baking sheet.
3. In a bowl, combine provolone, mozzarella, Parmesan, and butter. Stir into a cheesy mixture.
4. Spread ranch dressing on each chicken breast. Top with the cheese mixture, then sprinkle panko breadcrumbs over each.
5. Broil on high for 2–3 minutes until cheese is melted and breadcrumbs are golden brown.
6. Remove from oven, garnish with parsley if desired, and serve hot.
Notes
Use freshly grated cheeses for a smoother melt and better flavor.
To make it extra crispy, toast your panko breadcrumbs in a dry pan for 2 minutes before using.
If baking instead of grilling, cook chicken at 400°F for 20–25 minutes.
