Ingredients
4 cups broccoli florets, chopped small
1 cup shredded carrots
1 small yellow onion, finely chopped
2 cloves garlic, minced
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups half and half
2 cups chicken or vegetable broth
2 cups sharp cheddar cheese, freshly grated
1 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
Instructions
1. In a large pot or Dutch oven, melt butter over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for 30 seconds until fragrant.
