Ingredients
2 tablespoons butter
1 medium onion, diced
2 carrots, diced

3 cups chicken broth
2 cups cooked shredded chicken (thighs or breasts)
1/2 cup heavy cream
1 cup frozen peas
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 tablespoon chopped fresh parsley (plus more for garnish)
1 can refrigerated biscuit dough (8-count, halved or quartered)
Instructions
1. Melt butter in a large pot or Dutch oven over medium heat. Add diced onions, carrots, and celery. Cook for 5–7 minutes until soft. Stir in garlic and cook 30 seconds more.
2. Sprinkle flour over the vegetables and stir constantly for 1–2 minutes to create a roux.
3. Slowly pour in chicken broth, stirring to avoid lumps. Add shredded chicken, heavy cream, salt, pepper, thyme, and parsley. Simmer for 10–15 minutes until thickened.
4. Stir in frozen peas. Taste and adjust seasoning as needed.
5. Cut or flatten biscuit dough pieces and layer them on top of the simmering stew.
6. Cover the pot and bake in a preheated oven at 375°F (190°C) for 15 minutes. Uncover and bake another 10–12 minutes until biscuits are golden brown.
7. Let rest a few minutes before serving. Garnish with fresh parsley.
Notes
Flatten or quarter the biscuit dough to help it cook through evenly on top of the stew.
