2 cans (15 oz each) sweet corn, drained (or 3 cups frozen/thawed corn)
1 package (8 oz) cream cheese, softened
1/4 cup butter, melted
2 large eggs
1/4 cup milk
1 tablespoon sugar (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (optional topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- In a large bowl, blend softened cream cheese and melted butter until smooth.
- Add eggs, milk, sugar (if using), salt, and pepper. Whisk until well combined.
- Fold in drained corn until evenly mixed.
- Pour mixture into prepared dish and smooth the top.
- Sprinkle shredded cheese on top if desired.
- Bake uncovered for 40-45 minutes until set and golden brown on top.
