Ingredients
2 pounds ground beef
1 cup breadcrumbs
2 large eggs
1 small onion, finely diced
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 pounds Yukon Gold potatoes, peeled and cubed
4 tablespoons butter
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese
6 slices cooked bacon, crumbled
2 tablespoons chopped chives
Salt and pepper, to taste
Instructions
1. Peel and cube Yukon Gold potatoes, then boil in salted water until fork-tender. Drain and mash with butter and sour cream until smooth and creamy. Set aside.
2. Preheat oven to 375°F.
3. In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, and pepper. Mix until just combined.
4. Shape the meat mixture into a loaf in a greased baking dish.
5. Bake for 35–40 minutes or until the center reaches 160°F.
6. Remove meatloaf from the oven. Spread mashed potatoes over the top.
7. Sprinkle shredded cheddar cheese and crumbled bacon on top of the potatoes.
8. Broil for 2–3 minutes until cheese is bubbly and golden.
9. Let the meatloaf rest for 5–10 minutes before slicing.
10. Garnish with chopped chives and serve warm.
Notes
Use Yukon Gold potatoes for the creamiest mash texture.
For easier slicing, let the meatloaf rest fully before cutting.
You can prepare the meat and potatoes ahead, then assemble before baking.
