1/4 cup sour cream
1/4 cup green onions, chopped
1/4 cup red bell pepper, diced
2 tablespoons fresh cilantro, chopped
1/4 cup chopped tomatoes, for garnish
2 cups tortilla chips, for serving
Optional: sliced jalapeños, sliced olives, extra shredded cheese for garnish
Instructions
1. In a large bowl, mix cream cheese, sour cream, and taco seasoning until smooth.
2. Fold in shredded cheddar, green onions, and diced red bell pepper.
3. Line a bundt pan or round bowl with plastic wrap and fill with the cheese mixture.
4. Press firmly to mold and refrigerate for 1 to 2 hours.
5. Invert onto a serving plate and remove the wrap.
6. Garnish with chopped tomatoes, cilantro, and any optional toppings.
7. Serve with tortilla chips or fresh veggie dippers.
Notes
Let the cheese ball sit out 10 minutes before serving for easier spreading.
To shape without a bundt pan, place a small glass in the center of a bowl as a mold.
Pat toppings dry with a paper towel if garnishing ahead to avoid moisture.
