12 maraschino cherries, drained and dried

1 cup shredded sweetened coconut

1 cup powdered sugar

3 tablespoons unsalted butter, softened

1 teaspoon almond extract

1 1/4 cups chocolate chips or melting wafers

2 tablespoons shredded coconut for garnish (optional)


Instructions

1. Drain maraschino cherries and pat them completely dry with paper towels.

2. In a bowl, combine shredded coconut, powdered sugar, softened butter, and almond extract. Mix until a thick dough forms.

3. Scoop about 1 tablespoon of coconut mixture and flatten in your palm. Place a cherry in the center and wrap the mixture around it, forming a ball.

4. Place wrapped cherry balls on a parchment-lined tray and refrigerate for 30 minutes to firm up.

5. Melt chocolate chips or wafers in a microwave-safe bowl or double boiler. Stir until smooth.

6. Dip each chilled truffle into the melted chocolate, tapping off the excess. Place back on parchment.

Notes
