1/2 cup (1 stick) unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 cup unsweetened Dutch-processed cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 oz semi-sweet or dark chocolate bar, cut into chunks (for stuffing)
Instructions
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract until combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Cover the dough and chill in the refrigerator for 30 minutes.
- Scoop out about 2 tablespoons of dough and flatten slightly.
- Place a chocolate chunk in the center and fold dough around it to seal.
- Roll into a ball and place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 9–11 minutes, until edges are set.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
