Ingredients
4 chicken thighs or breasts
3 chipotle peppers in adobo sauce
1 can black beans, drained and rinsed
1 cup sweet corn kernels
1 avocado, sliced
1/4 cup fresh cilantro, chopped
1/2 cup sour cream or Greek yogurt
2 tablespoons lime juice
2 tablespoons olive oil
Salt and pepper to taste
Instructions
1. Blend chipotle peppers, adobo sauce, olive oil, lime juice, salt, and pepper into a marinade. Coat chicken and marinate for at least 30 minutes.
2. Grill or pan-sear chicken over medium-high heat until fully cooked (6–8 minutes per side for thighs, less for breasts).
3. Warm black beans and corn separately; slice avocado and chop cilantro.
4. Make the creamy sauce by mixing sour cream or Greek yogurt with lime juice, a splash of adobo sauce, and salt.
5. Assemble bowls with black beans, corn, sliced chicken, avocado, and cilantro. Drizzle with creamy sauce.
Notes
For a milder flavor, use fewer chipotle peppers.
Marinate the chicken overnight for deeper flavor.
