Description

Golden seared chicken is tossed in spicy garlic butter and served alongside tender rotini pasta coated in a creamy Cajun corn Alfredo sauce. Bold and comforting in every bite.


Ingredients

1 lb chicken breasts, cut into bite-sized cubes

2 tablespoons unsalted butter (for chicken)

3 cloves garlic, minced

1 teaspoon red chili flakes

8 oz rotini pasta

1 tablespoon unsalted butter (for sauce)

1 cup sweet corn kernels

1 cup heavy cream

1 teaspoon Cajun seasoning

1/2 cup grated Parmesan cheese

1 tablespoon chopped parsley

2 tablespoons chopped green onions

Salt and black pepper to taste

1 tablespoon olive oil (for searing)


Instructions

1. Cut the chicken breasts into cubes and season with salt, pepper, and Cajun seasoning. Set aside.

2. Cook rotini pasta according to package instructions. Drain and reserve 1 cup of pasta water.

3. In a skillet, heat olive oil over medium-high heat. Sear the chicken until golden and cooked through. Remove and set aside.

4. In the same skillet, melt 2 tablespoons butter. Add garlic and chili flakes. Sauté until fragrant.

5. Return the chicken to the skillet and coat well in the garlic butter mixture.

6. In a separate pan, melt 1 tablespoon butter. Add corn and cook for 2-3 minutes.

7. Pour in heavy cream and Cajun seasoning. Let it simmer to thicken slightly.

8. Stir in Parmesan cheese until melted and creamy.

9. Add cooked rotini to the sauce and toss until well coated.

10. Plate pasta and top with chili garlic chicken bites. Garnish with parsley and green onions.


Notes

Let the chicken rest before searing to lock in moisture.

Add a splash of pasta water if Alfredo sauce becomes too thick.

For a lighter option, swap heavy cream for half-and-half.
