This Chicken with Cheese Sauce is a creamy, savory comfort dish made with golden-seared chicken breasts drenched in a rich cheese sauce. Finished with crispy bacon and herbs, it’s perfect served over pasta or with roasted veggies for a hearty dinner.
Ingredients
2 boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk or heavy cream
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley
¼ cup cooked bacon bits (optional)
Instructions
1. Pat the chicken dry and season with salt and pepper.
2. In a skillet over medium-high heat, heat olive oil and sear chicken for 5–7 minutes per side until golden and cooked through. Set aside.
3. Reduce heat to medium, melt butter in the same skillet, and sauté minced garlic for 30 seconds.
4. Sprinkle flour into the skillet and whisk for 1–2 minutes to form a roux.
5. Slowly pour in milk or cream while whisking continuously. Cook until sauce thickens, about 3–5 minutes.
6. Lower heat and stir in cheddar and mozzarella cheese until smooth and fully melted.
7. Return chicken to the pan, spoon sauce over it, and let simmer for 2–3 minutes.
8. Garnish with fresh parsley and bacon bits if using. Serve immediately.
Notes
Always shred your cheese fresh from the block—it melts better and avoids grainy sauce.
Don’t rush the roux—give it time to cook off the raw flour taste for a smooth sauce.
For a thinner sauce, add more milk one tablespoon at a time until desired consistency.
